A simple, slower-baking cake made with 7Up and finished with a lemon glaze.

Ingredients
- 2 eggs
- 2 cups sugar, measured and then ground
- 1 cup vegetable oil (about 155 ml)
- 3 cups flour
- 2 teaspoons baking powder
- ½ teaspoon vanilla essence
- 1 bottle 7Up (about 350 ml)
- For the glaze: 1 cup powdered sugar, 2 teaspoons warm water, 1 tablespoon lemon juice and a few drops of yellow colouring
Method
- Preheat the oven to about 180–190 °C. Grease and flour a cake tin.
- Beat the eggs and sugar until creamy.
- Pour in the oil while beating.
- Sift the flour with the baking powder. Add it and mix gently with a spoon.
- Stir in the 7Up, pour the batter into the tin and bake for about 45 minutes, checking with a toothpick and adjusting for your oven.
- Cool on a wire rack. Mix the powdered sugar, warm water, lemon juice and a few drops of colouring to make a glaze, then pour it over the cake.
I kept the sugar in cups: the cookbook’s gram conversion (about 160 g per cup) appears inconsistent, so I’ve not carried it over.
