Ingredients

  • 5 peaches, washed and cut into slices or pieces (no need to peel)
  • ½ cup sugar
  • Juice of 2 limes or 1 lemon
  • 1 heaped tablespoon cornflour
  • For the topping: 1 cup flour, ½ cup sugar, 1 teaspoon baking powder, 115 g cold salted butter and 2–4 tablespoons boiling water

Method

  1. Preheat the oven to 190 °C.
  2. Place the peaches in an ovenproof dish. Sprinkle over the sugar, cornflour and lime or lemon juice.
  3. Bake the fruit for 10 minutes.
  4. Meanwhile, mix the flour, sugar and baking powder. Rub in the cold butter until crumbly.
  5. Add just enough boiling water for the crumbs to hold together.
  6. Scatter the topping over the peaches and bake using the upper grill until the topping is golden and biscuit-like. Watch closely so it does not overbake.
  7. Serve warm.
