A gently flavoured cake with ground almonds, orange juice and milk. The original notes leave the baking time and exact oven temperature to the baker, so I’ve kept those flexible here.

Ingredients

  • 100 g ground almonds, with skin
  • 115 g soft butter
  • 200 g sugar
  • 175 g flour
  • 2 teaspoons baking powder
  • 2 eggs
  • ½ cup orange juice
  • ¼ cup milk
  • Powdered sugar, for dusting (optional)

Method

  1. Melt the butter gently, then let it cool a little.
  2. Cream the butter with the sugar. Beat in the eggs one at a time.
  3. Sift the flour with the baking powder and fold it into the mixture.
  4. Mix in the ground almonds. Pour in the orange juice and milk and stir until combined; do not beat.
  5. Pour the batter into a greased baking dish.
  6. Bake in a preheated oven at medium heat until set and lightly golden. The original recipe does not give an exact time or temperature, so check for doneness with a tester.
  7. Cool slightly, turn out and dust with powdered sugar if you like.

The cookbook doesn’t specify the oven temperature or baking time. I’ve flagged both rather than inventing them.
