Conversations & Creations · From my kitchen
These are my own apple pancakes—quick to make, and lovely for children or breakfast. Smaller, thinner ones cook especially well.

Ingredients
- 2 apples, peeled, cored and grated
- 1 mug (about 250 g) flour
- 1 egg
- 1 cup sugar
- ½ teaspoon baking powder
- ¼ teaspoon ground cinnamon
- Milk, as needed
- Butter, for the pan
- Maple syrup, for serving
- Optional: raisins or desiccated coconut
Method
- Sift together the flour, baking powder and cinnamon.
- Add the egg and enough milk to make a spreadable batter.
- Stir in the grated apples. The batter should spread when pushed with a spoon but should not run by itself.
- Heat a non-stick pan over medium-low heat and add a little butter.
- Spoon the batter into the pan. Cook for about 2–4 minutes, until browned underneath, then turn and cook the other side.
- Serve with maple syrup. Add raisins or desiccated coconut to the batter if you like.
