A very simple breakfast bhatura. The dough is best left to rest for an hour, though the original notes say it still worked with a shorter rest.
Ingredients
- 3 mugs flour
- 3 level teaspoons baking powder
- ½ teaspoon salt
- Room-temperature laban, or yoghurt thinned with water and salted generously
- Oil, for frying
Method
- Sift the flour, baking powder and salt together.
- Add enough laban or thinned yoghurt to make a soft dough.
- Cover and rest for about 1 hour.
- Divide into 3 or 4 portions. Roll each one out and cut into the shapes you like.
- Fry in hot oil until puffed and cooked through. Serve warm with tea or jam.
