This straightforward loaf came from a Good Food magazine recipe. It takes about 10 minutes to prepare and around 25 minutes to bake, depending on your oven.

Ingredients
- ½ cup butter, softened
- 1 cup sugar (if coarse, measure it first, then grind it)
- 2 eggs
- 1½ cups flour
- 1 teaspoon baking powder
- ⅛ teaspoon salt
- ½ cup milk
- 2 tablespoons fresh lemon zest
- For the glaze: 1 cup powdered sugar, 3 tablespoons fresh lemon juice and a little water, as needed
Method
- Preheat the oven to 180 °C. Grease and flour a loaf pan.
- Beat the softened butter until creamy. Add the sugar and beat until fluffy.
- Add the eggs one at a time, blending each one in before adding the next.
- Sift the flour, salt and baking powder together. Add the flour mixture and milk alternately, beginning and ending with flour.
- Stir in the lemon zest and pour the batter into the prepared pan.
- Bake for about 25 minutes, checking for doneness and adding time if needed.
- Turn the loaf onto a wire rack. While warm, poke holes over the top.
- Mix the powdered sugar and lemon juice with enough water to make a glaze that is not too runny. Pour it over the loaf and let it drip down the sides. Slice once cool.
Ground regular sugar makes a slightly crunchy glaze; icing sugar gives a smoother finish.
